Abstract
This study was conducted for evaluating the effect of diets with nergy sources of different origin (sugar cane molasses type B and cereals) on body composition and meat quality of pigs from a maternal cross utilized in Cuba (Yorkshire x Landrace, YL and Landrace x Large White or Camborough, LLW). A total of 96 castrate male pigs (48 from every genetic line) were used in a performance trial and distributed at random according to a 2x2 factorial arrangement. The animals were slaughtered approximately at 100 kg live weight. A total carcass dissection was conducted and back fat thickness was measured. Meat, fat and bones composition was calculated from every carcass. The evaluations related to meat quality were made in longissimus dorsi. The chemical composition of meat, comprising humidity, ash, minerals (Fe, Na, K, P), nitrogen and ether extract was also determined. Additionally some functional meat properties were determined: water holding capacity (WHC) and gel force. The meats were also sensory evaluated (aspect, texture, juiceness and taste) and from the point of view of tenderness.
