Vegetable fennel (Foeniculum vulgare var. azoricum), a member of Umbelliferae family, is known as Sweet fennel, Florence fennel or Finocchio. It is widely grown in the Mediterranean region. Fennel is an annual crop planted for its thickened bulb-like base of the leaf stems and grows best under cool weather. It has a very aromatic, distinct anise-like flavor and odor. Fennel is consumed as both boiled vegetable and raw in salads with other vegetables. In this article, fennel's plant characteristics, its growing technique and general use of it were discussed.
