Moisture uptake levels as low as 23.5% (wet basis) after soaking were found adequate for good yields of rice. Pressure soaking considerably reduced soaking times, and the resting of the grains after the soaking stage was observed to improve yields, grain translucency and deformity, while increasing the color of the product. Photo mictographs illustrated the changes in the grain structure due to the treatments
