The results of studies on the process of wheat dough fermentation are given, the indices of wheat flour quality and fermentation process are analysed. On the basis of this the index of wheat flour quality is proposed which integrates the influence of protein-proteinase and carbohydrate-amylase complexes taking into consideration each of them.

[Method for sowing soybean]. [Russian]

The method of sowing soybeans is proposed including pretreatment of soybean seeds with the 634 D-standard strain of Bradyrhizobium japonicum and their simultaneous incorporation into soil with mineral fertilizer (granulated superphosphate) mixed with soybean rhizotorphin. The method is found out to give significant rise in crop yields (26-32 %) and protein content in soybean seeds.
