Prepared foods trends: Charting the hottest new growth areas [1982]

Extract: Ethnic foods remain popular in the prepared food industry. The peak of popularity for Mexican foods was seen in 1980 when a 23% expansion over the previous year was observed. Business Trend Analysts (BTA) anticipate an additional 14% growth rate. This country's enlarging Hispanic population is one reason for the growth; and consumer curiosity, continuing education, and increased income also stimulate interest in ethnic foods. Food manufacturers are introducing product lines to meet the growing demand. CREST (Consumer Reports on Eating Share Trends) reports that the Chinese food market is becoming a popular choice in ethnic food. Oriental population growth accounts for some increases as does the healthy image associated with this type of cooking. Corn-based snack foods and yogurt have increased in popularity as have puddings, breakfast bars, and other between-meal offerings (frozen pudding pops) because of the nutritious light snack image. Aseptic technology allows food manufacturers to package beverages (fruit juice, milk) in unrefrigerated boxes, and soft-drink producers are aiming at the health-conscious crowd who want to avoid sugar and caffeine.
