Quantification of Tocopherols and Phytosterols from the Korean Native Soybeans Germplasm [2008]

This study was performed to quantify the tocopherols and phytosterols. which used as antioxidants, and known to have hypocholesterolemic properties, of the 152 Korean native soybeans varieties, distributed from the Rural Development Administration, using GC-FID. Korean native soybeans germplasm were campesterol, stigmasterol, and β-sitosterol. The total tocopherol content and phytosterol content ranged from 126.8 ug/g to 438.7 ug/g, and 620.4 ug/g to 1304.0 ug/g, respectively. Among the 152 accessions of the soybeans germplasm, IT021832 and IT209068 were showed highest content in total phytosterols and tocopherols as 1304 ug/g and 438.7 ug/g, respectively. In addition to this, the highest value was observed in campesterol at IT162653 as 366.0 ug/g, stigmasterol at IT021832 as 288.5 ug/g, β-sitosterol at IT022137 as 765.3 ug/g, α-tocopherol at IT022103 as 80.9 ug/g, γ-tocopherol at IT209068 as 323.7 ug/g, and δ-tocopherol at IT021632 as 89.2 ug/g. Finally, the IT021832 among the 152 Korean native local varieties could be recommended as a good source o food technology and nutrition and breeding material.
