Soybean curds, or tofu, are low in calories and high in protein. Tofu has been eaten in the Orient for thousands of years. It is produced the same way cheese is made from milk. It is similar to milk but has less calories, slightly less protein and calcium, but more magnesium and iron than milk. Tofu is low in sodium so it is good for people with high blood pressure. Tofu has no cholesterol. Low fat versions may be produced commercially. Tofu can be grilled, scrambled, sauteed, made in mayonnaise and used as pizza topping. The most common preparation is stir-frying with vegetables. A recipe for Tofu maniccoti is given.
