Lipids are the main energy reserve of the organism, add essential fatty acids, carry vitamins A, D, E, K and contribute to the foods palatability. The increasing interest in the importance of the lipids in the health, led to several studies whose main purpose was to determine the effects that may cause in different aspects of human health. The present work allows to know the physiological action of olive and sunflower oils and determine if it is convenient the incorporation of them to the diet. The basic processing to obtain the oils is described, as well as the general lines of composition and physico-chemical properties to be considered appropiate for nutrition. The biochemical, physiological, metabolical and nutritional aspects are shown to determine the role that they develop in the human organism. Both oils own beneficial effects and they are in a privileged position with respect to other dietary lipids, mainly with respect to saturated fats.
