Ganoderma lucidum wine beverage was fermented by adding proper sucrose into Ganoderma lucidum liquid to S. cerevisiae. The single factor experiment and the orthogonal experiment method were studied and the amount of the mellow and residual sugar on the adding amount of sucrose and S. cerevisiae, temperature, time. The optimal fermentation conditions were obtained?the sucrose was 6%, the vaccination quantity was 2% , at 35 ? for 36 hours. In production, the content of alconolic was 7.6% and residual sugar reached 0.11%. It was possible that to produce polysaecharide wine by fennentating in file interaled S. cerevisia, media and with sucrose and Ganoderma lucidum mycelia.
