Se ha estudiado la evolución de un vino tinto DO Cigales durante su permanencia en distintos sistemas de envejecimiento, con chips, travesaños de madera de roble y barricas del mismo tipo de roble. Concretamente se ha realizado el seguimiento de los compuestos fenólicos y del color. Los resultados obtenidos permiten conocer la influencia del tiempo, sistema de envejecimiento y origen de la madera en la evolución de las familias de polifenoles y color.
