The use of antibiotics (ATB) in the treatment is a major step forward in the modern human and veterinary medicine. However, these treatments have a residual effect on the animal products, between other dairy products. These residues can be harmful to human health. The objective of our study is the comparison of the effectiveness of two tests for the detection of residues of ATB (quick test Beta Star and enzymatic test Penzym Test) used by two industrial raw milk collected in the region of Souk Ahras in the north-eastern Algeria. 170 Samples were collected from the collection centers of raw milk. The comparative analysis of the two tests showed a low effectiveness of the rapid test in relation to the enzymatic test. This are the MRL (maximum residue limit) high of the rapid test in relation to the enzymatic test which at the origin of the difference in detection of ATB. In addition, the test khi2 practice on the frequency of detection compared between the collection centers showed a significant difference (p < 0.05). Two factors are related to this difference: the field of collection of raw milk relative on the geographical area (mountains, plains, highlands) which conditioning the intensity of certain diseases and in effect the intensity of the treatment by the ATB ; the dilution effect exercised by the mixture of milk during the collection (negative correlation between the dose of residues of ATB and the number of farms frequented by the collection center
) hence the need of screening at the outlet of the holdings to avoid the contamination of batches healthy. We put in evidence of the need of adoption, by the state, of a strict regulatory framework still absent in Algeria (defining MRL and compatible tests to their detection) to protect both the industrial (technological inhibition) and consumers (health risk).
