Aushari cheese is one of the most popular semi-hard cheeses made in Iraq. It is traditionally made from sheep and goat milk. Several attempts were made to use different types of milk and to study the quality of the aushari cheese made from raw cow milk partially and totally substituted recombined milk made from powder and anhydrous milk fat
