During researches on deep frying the behaviour of a model system of olive or soya oils in the presence of starch was studied. By means of coordinated analytical techniques the lipids were fractionated and characterized (non-altered triglycerides, non-volatile oxidation products, polymeric substances, residue starch). The different pattern of oxidation process with and without starch was established. Neoformation compounds, whose product reaction between triglycerides and starch were characterized by I.R. spectroscopy, were isolated.
