This work is aimed at verifying hypoteses of consumer behaviour with reference to consumer choice for olive oil. A market inquiry has therefore been carried out on a number of families in the city of Perugia, main town of an area in which olive tree cropping and olive oil production are particularly strong. In particular, the research was focused on: purchase and consume behaviour of people living in the urban area, functions and situations leading to oil use, bonds to traditional olive tree cropping, quality awareness, level of interest and involvement in the choice. To better highlight elements leading to development of peculiar consumer behaviour, in relation to an everyday use product, it was logically natural to orient the research on qualitative rather than quantitative parameters, referring to standards of consumer motivation assessment, aimed at analyzing personal attitude and percepion in relation to the consumed object rather than its physical reality
