Among biologically-active molecules, the angiotensin-converting enzyme (ACE) inhibitory peptides have been extensively studies. ACE converts angiotensin I into angiotensin Ѧ by cleaving the C-terminal dipeptide (His-Leu) of angiotensin I and also inactivates bradykinin which depresses blood pressure.
