Changes in the thermophysical properies of apples in the process of drying  [2000]

Theoretical formulas to calculate the course of thermal variations, properties and density of apples in the course of drying from raw to completely dried material were defined basing on the rules of thermodynamics. The results of experimental studies confirmed the pertinence of theoretical formulas, where density, thermal conductivity, thermal diffusion and volumetric specific heat capacity of raw material give the sum of product volumetric fractions of particular phases and their corresponding properties. Similarly, specific heat capacity is the sum of mass fraction products of the phases and their heat capacities
