In this article the data analysis of the grapes of the Merlot grade gathered in the conditions of the soil differences of the Aurora farm, the Crimean area are submitted. The main indicators of quality of grade – mass concentration of sugars, titratable acidity, phenolic substances and рН were defined. Influences of soils on organoleptic indicators of the received wines were estimated
