Abstract: A brief report describes the quality characteristics of olive oil. Information is provided on the harvesting of olives, the isolation of oils by cold-pressing of quality olives, the processing of the oils (chemical treatment and purification), and the use of the oils in cooking. Guidelines for long-term (up to 2 years) storage of olive oil are included.(wz)
