Extract: Organic agriculture refers to crop production without the use of synthetic pesticides and fertilizers. Claims have been made that grain produced organically contains more protein than that produced conventionally. Nine pairs of organically and conventionally grown wheat samples were compared for differences in crude protein, moisture and ash. Questionnaires were used to collect information on crop yield and losses. After collection, each organic grain sample was paired with a conventional one by proximity of the farms as well as similar acreage size and time and year of harvest. This was done in order to minimize environmental variables that would affect the nutritional quality of the wheat. Grain samples were labeled then stored at minus 20 degrees centigrade. Protein was determined by the Kjeldahl method. After milling the grain, samples were dried in a vacuum oven to determine moisture content. This figure was used to calculate dry weight crude protein percentages. Ash content was assayed after heating the grain flours to either 550 or 700 degrees C. A significant difference was shown after ashing at 550 degrees with the conventionally grown samples being consistently higher. Results are stated as means plus or minus standard deviation of organic vs. conventional samples, respectively, with the paired t-test value also given. The average yield in bushels per acre was significantly greater for the conventional farms compared to the organic farms
. Yield statistics were not influenced by irrigation or crop loss since irrigation was not used on any farm and crop loss from insects, weeds, plant diseases and lodging were the same on both types of farms. The average length of time that land was planted organically was seven years. (author)
