A study in 1-day-old chicks on the neurological toxicity of monosodium glutamate (MSG) indicated that ascorbic acid (AA) protects against the toxic neurological symptoms that arise from a high MSG dose, and that AA can both prevent and cure MSG tocxicity. It is suggested that the incorporation of AA with MSG in food preparation may preclude toxic reactions to MSG in subjects. (wz)
