A study of four important shellfishes of Bangladesh belong to the mulluscan and Crustacean species was done. The percentage of edible meat ranged from 10.38 to 14.10 percent. The proximate composition of the shellfish species indicated moisture to be the main component ranging from 76 to 85 percent. Protein, fat and ash contents ranged from 9.89 to 15.55%; 1.08 to 8.83% and 0.79 to 1.61% respectively. Distribution of chemical components in various parts of the shellfishes showed that edible flesh contained higher level of crude protein and lower level of ash except for crab which contained a higher level of protein in claw meat than the body meat. Non-protein nitrogen (NPN) ranged from 0.19 to 9.91% in shellfish. TVB - N and TMA - N, were found to range from 10.0 to 14.0mg% and 1.20 to 2.42mg% respectively. The solubility of muscle protein of shellfishes in 1.0 M Nacl was found to vary from 46.43% to 85.50% being the lowest for mussel and the highest for snail. Glycogen content of the shellfishes ranged from 35.0 to 85.0mg%. Essential amino acid composition revealed that arginine content was the highest in molluscan and lysine in the crustacean species. The amino acid composition indicated that protein of all the species had high biological value.
