Carabao milk 7; its calcium, magnesium, inorganic phosphorus and titratable acidity values

Carabao's milk is a rich source of Ca, Mg, and P. Individual milk samples gave a mean Ca value of 212.98 mg/100 ml although values ranged from 136.37 to 265.75 mg/100 ml. Magnesium, which occurs in lesser quantity than Ca varied from 12.46 to 34.55 mg/100 ml but averages 19.50 mg/100 ml milk. Fresh carabao's milk has a mean initial titratable acidity value of 0.16% lactic acid which ranged from 0.11% to 0.22% lactic acid. Significant correlations in the concentration of Ca, Mg, inorganic P and acidity were observed. With increasing initial acidity, there is a general increase in these minerals
