Lipid, mineral and protein fractions of the three soybean varieties grown in Spain (Williams, Beeson and Amsoy-71) are studied in order to stablish their quality. Lipid fraction study includes oil percentage, oil quality indexes and fatty acid composition. Mineral fraction study includes P, K, Ca and Mg contents, and Fe, Mn, Zn and Cu contents, as the most representative microelements. Protein fraction, as the most representative of the product quality, comprises crude protein content, aminoacid composition as well as their relationships
