Factors affecting lipolysis in goat milk

Lipolysis in goat milk was not affected by stage of lactation. A significant correlation (P0.01) was observed between the fat content and lipolysis in goat milk but not in cow and buffalo milk. The rate of lipolysis increased with storage at room temperature
