Yield and quality of broiler meat as influenced by stock density, strain and sex

Carcass yield and meat quality of 149 broiler chicks from 4 strains (IC-3, IC-2, IR-3, IR-2) reared under two stock densities (I. 144 sq. cms. per bird) in cages, were studied. Birds provided more floor space (stock densities II) had higher life weight, giblet weight and relative back weight whereas breast, drumstick, wing weights (%) and moisture content were higher in birds subjected to stock density I (less floor space) and the breast meat was more tender in these birds. Males were superior to females in life weight eviscerated weights, giblet weight and drumstick weight (%) whereas breast and wing weights (%) and tenderness of breast and leg muscles were better in females. Among strains, IC-2 had significantly higher life and eviscerated weight rocks (IR-3, IR-2) were superior to cornishes (IC-3, IC-2) in percent breast weight. Shrinkage and cooking loss were not affected by any of the treatments like stock density, strain or sex
