Date syrup was used as a substrate for the production of citric acid by Aspergillus niger in submerged culture. The chemical composition of date syrup was first investigated to determine the concentration of the substances relevant to citric acid fermentation. Successful utilization of the resin column used in the deionisation treatment required that the deionisation and regeneration procedures be carried out at 80 deg. C. Under optimum conditions the maximum yield of citric acid achieved in the shake flask system and the fermentation characteristics showed a good pattern comparable to that obtained in the sucrose control medium
