Diastase and hydroxy methyl furfural content of honey produced in northeast Iraq

Samples were collected from 32 different areas in Northeast Iraq, representing honey produced in domestic and modern apiaries. At the same time geographical survey of crops planted around the apiaries was done to find the relationship between honey quality and its plant sources. Chemical analysis of honey indicates that apple and wild flower honey gave the highest diastase number, followed by sunflower and fruit flower honey, while cotton honey gave the lowest diastase number. The results also show that apple honey contains the lowest amount of hydroxy methyl furfural, followed by sunflower and wild spring flowers, then fruit and vegetable flowers, while cotton honey contained the highest amount of H.M.F.
