[The contribution to investigation of sunflower and soybean protein amino acids in relation to their food value]

Soybean and sunflower nutrients, with equal content of protein are differentiated in content of other nutritive components. Sunflower nutrients contain greater amount of raw cellulose and raw fats; soybean nutrients contain bigger content of extractive without nitrogen substances. The experimental mixtures (EM) were isoproteinic, with equal share of all other components, so that they differentiated only in constituents where there was the difference between the investigated nutrients. Soybean EM in experiments with rats showed significantly higher nutritive value (NV) than EM with other investigated nutrients. Soybean grits EM and sunflower meal EM had simmilar NV, while the sunflower grits EM had the worst NV. The meal NV was significantly bigger in relation to grits NV. The amino acidic content of soybean and sunflower proteins was equalized. The total biological value of amino acids, and especially essential, was bigger for soybean nutrients, and semi-essential and nonessential for sunflower nutrients. Established portion NV was the result of its amino acids additiveness. Soybean proteins had better NV in relation to sunflower proteins, which was evident especially for grits proteins and which was the result of specific process of production. Soybean and sunflower protein NV was in correlation with biological activity of their amino acids. The limiting acid in sunflower proteins was biologically active lysne, by which additiveness was conditioned the level of other amino acid usage.
