Novel researches to obtain starch products with higher added value, such as cyclodextrin and maltooligo saccharide which the author has recently succeeded in commercializing in Japan are introduced as examples of the new direction of starch utilization. Recent development of raw starch digesting amylase is also discussed with a relation to energy saving saccharification of starch
