The task was realized by drying potatoes after their communition to pulp, from which, after suitable souring a part of the cell juice could be separated mechanically, i. e. by centrifugation. The energy economy had been reached owing to application of the dispersive drying technique in the fountain drying appliance as well as owing to the water content reduction in the dried material
