Three groups of hybrid bulls and one group of purebreed bulls were fattened half-intensively within one pasture season. The bulls were slaughtered at 460 kg of body weight and after dissection M. longissimus dorsi and M. semitendinosus were analysed. The carcass composition of hybrid bulls was somewhat better than that of Black-and-White. Chemical composition, physico-chemical properties and organoleptic parameters point also to the higher quality of meat of hybrid bulls
