Weight of certain muscles as an index of beef carcass muscularity

Studies were carried out on 63 Black-and-White bulls of 450 kg of body weight. After slaughtering 10 muscles from right carcasses were taken. The correlations of muscle weight with the weight of meat in half-carcasses, round, shoulder and 5 meat cuts were relatively high, and with the weight of fat and bones and the percentage content of all tissue components in half-carcasses, relatively low. For the estimation of meat content in bull half-carcasses the following muscles: biceps femoris; psoas maior; triceps humeris and semimembranosus have been proposed
