Food processing enterprises were initiated by import restrictions. A list of 45 of these is given. The largest processers are the Guyana Sugar Corporation and the Rice Board. Furit preserves, jams and jellies, processed meat and fish, condiments and spices, rice and corn-based cereals, flours from root crops, corn, rice and plantain, and coconut oil are locally produced. Production constraints are: limited foreign exchange to purchase equipment, raw materials and packaging materials and inadequate supply of local raw materials.
