Effect of different dietary nitrate content on the plasma beta-carotene and vitamin A concentrations and on the rumen metabolism of young fattened bulls

The young bulls of the Black and White breed were fed on rations containing nitrates as sodium or potassium nitrates. The nitrate intake by the animals amounted to 21 or 36 mg N-N03 per 1 kg of body weight. No toxic effect of nitrate intake in quantities to 0.145 percent N-NO3 of dry matter of the ration was stated as well as no changes in the blood of beta-carotene and vitamin A content. In the rumen fluid of experimental animals during feeding the rations with nitrates the higher concentration of N-NO3, the changes of the protein nitrogen, ammonia nitrogen and urea content and the increase of methaemoglobin level in blood were found
