The effect of mastitis on the changes in milk composition and its properties were investigated. Bacteriological examination of milk samples revealed that bacterial total count were associated with the WST reaction, and the counts of Staphylococcal infection was higher than Streptococcal bacteria. The average of fat content, fat globules in lcc milk, long chain fatty acids, diameter casein micelle, casein M.W., casein N. decreased, however short chain and unsaturated fatty acids, non-casein N., whey protein and non-protein N increased by increasing of mastitis of mastitis infection.
