Chemical changes induced by gamma irradiation in soybean seeds: Effect on some oil constants, phospholopids, fatty acids, hydrocarbons and sterols [Egypt]

Soybean seeds were exposed to gamma irradiation with doses of 50, 100 and 150 K rad in an attemp to extend their shelf-life and to reduce trypain inhibitor content. Effect of gamma irradiation on some oil constants i.e. acid number iodine value and peroxide value and some oil constituents i.e. phospholipids, fatty acids, hydrocarbons and sterols was studied to assess the biological value of irradiated soybean. The obtained results indicated that several changes might took place in soybean oil upon exposure to gamma irradiation. Acid number and peroxide value slightly increased while iodine value decreased as a result of irradiation. Phospholipids proportionally decreased as the dose of irradiation increased. Some unsaturated fatty acids disappeared during irradiation. These changes may be due to the conversion of some unsaturated fatty acids into saturated ones during irradiation treatment. Eight hydrocarbones (C 23-C 32), six hydrocarbons (C 25-C 32) and five hydrocarbons (C26- C 32) were disappeared during irradiation with 150, 100 and 50 K rad, respectively, showing the effect of irradiation on hydrocarbons, however, sterols content of oil increased with increasing the dose of irradiation
