Oil samples extracted from seeds of orange, mandarin, lime and grapefruit were saponified and the fatty acids fractions were isolated and GLC fractionated. The obtained data demonstrated that fatty acids compositional pattern of each oil differed in a number of aspects: Mandarin seed oil contains the largest number of fatty acids while grapefruit seeds oil contained the lowest. The relative amounts of total volatile fatty acids in the investigated citrus seed oils showed to be generally higher than those of the other studied edible oils. It is also concluded from the obtained results that lime seed oil was almost similar in the degree of unsaturation to soybean oil. The orange seed oil pattern was followed the same trend of cotton seed oil. The relative amounts of total essential fatty acids in lime seed oil were found to be the highest among all studied oils especially the concentration of linolenic acid.
