Uv-vis-ir and NMR spectroscopy of B-carotene in sundried apricot sheets [Egypt]

B-carotene represented 80.4% of the total carotenoids of apricots grown at Fayoum (Balady Variety). Carotene, cryptoxanthin, lycopene and E-carotene were also determined. The retention curves of B-carotene in sundried apricot sheets were nearly sigmoidal. Sulfur dioxide added to apricots before processing had a marked effect on increasing storage stability of B-carotene. All samples showed no shift in the visible spectrum at the end of storage. UV scans showed a different absorption pattern for unsulfured or low sulfur dioxide treated samples. The IR spectra confirmed the results obtained from UV absorption measurements. Cis-isomers of B-carotene and epoxides were detected from IR and NMR spectra at the end of the storage period.
