Microorganisms in factory brine. II Lactic acid bacteria

The lactic microflora of 45 brine samples was studied. A great number of samples (75.6%) was found to contain a population ranging between 10(exp 5) and 10(exp 6)/ml. Among the isolates, Lactic plantarum occurred frequently (81.5%), followed by Leuc. mesenteroides (7.7%), Lactic casei subsp. casei (4.6%) and Leuc. paramesenteroides (3.9%), while 2.3% of the isolates were characterized as unidentified streptobacteria. The strains of lactobacilli were not found to form slime from sucrose. In the presence of 12% NaCl the growth of all the isolates was inhibited, while a great number among them was found to split tributyrin
