Studies on the causal factors of skin browning during storage and its control method in non-astringent persimmon (Diospyros kaki Thunb.)

This study was carried out to investigate the causal factors of skin browning in non-astringent perimmons during storage and to develop control methods. Moisture contents in fruit skin before and after the harvest time, polyeethylene film thickness for bagging, rate of potassium fertilizer application, and spraying of bordeaux mixture were studied in relation to skin browning during normal temperature storage and low temperature storage (Temp. 0-2deg C, Humidity 80-85 %). The skin browning in non-astringent persimmon occurred about 5.8-12.8 % on the field condition before storage and it was low in order of Suruga, Fuyu, DaeanDangam and Jiro. Occurrence rate of skin browning become more serious as storage is prolonged. The polyphenol contents of fruit skin in Fuyu during storage was revealed as 430mg % at harvest time, 390mg % at 40 days storage and 190mg % at 80 days storage, and it was correlated with severity of skin browning at each time. Moisture contents of fruit skin at harvest time was correlated with occurrence of skin browning during storage. Drying fruits for two days in the shade after harvest, remarkably decreased the occurrence of skin browning during storage. Skin browning was decreased by bagging when polyethylene film of 0.06mm thickness was used than when 0.1mm or 0.03mm was used. The higher the rate of potassium-fertilizer applied, the more potassium contents of fruit and the less occurrence of skin browning fruit were observed. Spray of bordeaux mixture remarkably increased occurrence of skin browning. Copper contents of fruit skin was increased by bordeaux mixture spray and the content was correlated with occurrence of skin browning
