Seasonal changes in active tannin content in pulp and peel of the Giant Governor banana during fruit growth and maturity

Active tannin contents of the pulp and peel of the Giant Governor banana (Musa AAA cultivar, Cavendish group) was larger at the early stages of fruit development but declined with maturity irrespective of the season of development of the fruit. The pulp contained more active tannin than the peel in the early stages of fruit development, particularly in fruits growing and maturing during September-February, compared with March-August grown fruit. But active tannin content in the pulp fell steadily with maturity while the peel retained a relatively larger amount of tannin.
