A study of the characteristics of seeds and the composition of the hulled seeds and the flour, was performed on 6 hybrids used in oil production, as well as on one hybrid with a greater quantity of protein. The protein hybrid has the largest seeds, the greatest seed mass and the best hulled seed/seed coat ratio. Based on the seed characteristics, hybrids NS-H-26 and NS-H-43 also stand out among the other hybrids. The protein hybrid contains the greatest amount of protein, followed by hybrids NS-H-26 and NS-H-43. Flour, obtained from the protein hybrid, has the highest content of total essential and non-essential amino acids, while it is somewhat lower in flour obtained from the hybrid NS-H-43 and the lowest in flour obtained from the hybrid NS-H-26. The protein hybrid is the most suitable for producing defatted sunflower flour, but hybrids NS-H-26 and NS-H-43 can also be used.
