Distribution of aromatic substances in black currants

The study of the content of aromatic substances in individual parts of the black currants plant (Ribes nigrum) showed that the volatile aromatic components were abundantly represented in dormant buds. If the buds opened the content of aromatic substances depending on the stage of budding is even higher. Differences in the content of aromatic substances were found in branches with buds removed after budding. Leaves contained about 25 per cent of the total amount of aromatic substances in buds. Fractioning of aromatic substances to the acid, alkaline and neutral fractions confirmed that from the viewpoint of organoleptic characters the neutral fraction is the richest and most acceptable. Comparison of five varieties of black currants revealed that the variety Mendip cross, NA (number of aroma) 1984 and the variety Roodknop, NA 1004, contained the highest and the lowest amounts of aromatic substances, respectively. Medium content of aromatic substances (NA 1461) was detected in the CSFR variety Eva.
