Objective pig carcass classification in Greece

This experiment was an obligation of Greece to the EEC to apply objective pig carcass classification, based on the carcass lean meat content. By using 3 electronic devices, we measured on the left half of 130 pig carcasses the backfat thickness in mm including rind at the positions 8 cm LR and 6 cm 3/4 LR, and the thickness in mm of the Longissimus Dorsi muscle at the position 6 cm 3/4 LR. We found the % lean meat content of each carcass by complete cutting with knife to muscle tissue, bones, subcutaneous fat, inter muscular fat and connective tissue (Kulmbach method). We correlated these 4 variables finding thus one regression equation for each electronic device. Fixing the terminal software of each device with the proper equation, we can now estimate on line; by probing twice in the right positions of the carcass its lean meat content.
