Comparative examination of the nutrient value of extracted grits processed from different domestic and foreign soybean species

The comparison of 12 domestic and 18 foreign selected soybean varieties coming from the same producing area was performed with special regard to the amino acid composition of soybean proteins, and in vivo utilization in monogastric animals. The nutrient contant /dry material, raw protein, raw fat, raw fiber, ash, N-free extractable material/ of soybean samples was determined. Then the samples were extracted with ethylic ether and heat-treated at 100 C in a humid medium for 20 minutes. The biologic value and real digestibility, as well as net and productive utilization of the extracted and heat-treated soybean proteins, were determined on the basis of N-metabolism investigations carried out on rats. The average raw protein and raw fat content of the foreign and domestic varieties were 32.2, 31.4 and 19.3, 19.5 respectively. Amongst the domestic varieties the protein content is the greatest in the Akos breed /39.4 o/o/, followed by Bolero /36.4 o/o/. In the other breeds the respective valuues were between 26.8-43.2 o/o. From the foreign breeds the Bora /FRG/ had, besides 38.2 o/o raw protein content, 18.5 o/o raw fat content.
