Effect of storing dehusked mature coconuts on the quality of copra (a research note)

Dehusked mature nuts stored for 1, 2, and 3 mo had 1%, 9%, and 27% germination, respectively. Moisture content of coconut meat was found to decrease with increase in time of storage. Meat of 1-, 2-, and 3-mo stored nuts had moisture content (dry basis) of about 80%, 66%, and 55%, respectively, as compared to about 100% for unstored nuts. Drying time of meat from stored nuts was likewise decreased when storing time was prolonged. No significant difference in color, smell, and cleanliness of fresh meat and copra between stored and unstored nuts was observed. While prolonged storage offers an advantage in shorter drying time, it causes nut germination which definitely lowers the copra weight.
