Rapid methods of estimating the major constituents in very small quantity of milk

Estimation of the milk fat were carried out using a rapid method. The rapid fat was estimated by a simply spinning untreated milk in a microhematocrit centrifuge for 15 minutes at 12,500 rpm. In comparison between values obtained by rapid method and Babcock method showed that the correlation coefficient (r) for buffalo milk and cow milk were 0.973 and 0.988 respectively. For practical purposes, on average of the true milk fat can calculate in a simple form; buffalo milk fat (gm.%)=0.79 x % rapid fat-0.65, cow milk fat (gm.%)=0.75 x % rapid fat-0.32. The aqueous phase of milk in the capillary tube is also a useful material for milk protein determination. The present methods for estimating milk composition are rapid and reliable with a small quantities of milk.
