Studies on the quality of milk available in surrounding local markets of Manikganj Milk Chilling Centre and Milk Vita, Manikganj [in Bangladesh]

A total of fifty milk samples were collected randomly from surrounding local markets of Manikganj Milk Chilling Centre of Milk Vita. Similarly another fifty milk samples were collected from farmers of co-operative societies during supplying milk to the Chilling Centre. Parameters used to monitor the quality of both types of milk were specific gravity test, acidity test, milk fat content, solids-not-fat content, total solids content and gross energy value of milk. From the results it was found that the mean fat content of milk collected from local markets was significantly (P0.01) lower than the milk supplied by farmers of co-operative societies (30.0 vs 47.5 g/ka). Similar results were seen for Specific gravity (1.022 vs 1.031), solids-not-fat (74.0 vs 88.0 g/kg) total solids (1050 vs 1360 g/kg) and gross energy value (2.45 vs 3.41 MJ/kg) of milk. Only nonsignificant difference was seen between the acidity content of two types of milk samples (0.160 vs 0 156%). Significantly lower amount of fat, solids-not- fat, total solids and energy value of local market milk indicates that this milk was adulterated by adding water in it. This was also supported by specific gravity test.
