Determinations were made on the most important characteristics (coagulation time, time characteristically required for the solidification of the coagulate, quantity of NPN materials formed during coagulation as a function of the order in which the operations were applied, enzyme concentration, CaCl2 addition, reduction in pH) involved in the coagulation by rennet of lactalbumen concentrates with various compositions, produced with the combined application of membrane separation techniques and water extraction. The coagulation time decreased as the extent of ultrafiltration increased, rose slightly as the result of diafiltration, and decreased as the result of water extraction. These changes were decisively influenced by the protein content and to a lesser extent by the drop in Ca content after diafiltration. The enzyme concentration, an increase in the quantity of CaCl2 added and a reduction in pH led to a decrease in the coagulation time. The most important conclusion is that a considerable amount of rennet can be saved by means of ultrafiltration, diafiltration and water extraction, e.g. ultrafiltrational concentration in itself led to a saving of more than 80 o/o
