Variation of quantitative composition of milk fat triacyloglycerols

Sesonal, regional and type-of-farm changes of composition of bulk milk fat triacyloglycerols have been evaluated by means of the gas chromatography method. The greatest seasonal variation was noticed for triacyloglycerols of 52 and 54 carbon atoms in molecule. Regional differences in content of individual triacyloglycerols were found to be mainly affected by period, in composition of triacyloglycerols differences were noticed between fat from milk coming from private farms and from large-scale state ones
